The sign of the fish came into being when the Christians were being killed for their belief in Christ Jesus.

People usually walked in those days (or rode camels or donkeys).

They would often times carry a staff (walking stick) with them as they traveled the dirt "roads".

When encountering someone along the way, a Christian would make a mark in the dirt or sand with his staff that would equal HALF of the FISH SYMBOL... If the other person completed the symbol, then the Christian knew that they too were a believer in Jesus; if not, then the Christian would know otherwise as well.

As far as the fish symbol eating the Darwin symbol, I think they are just wanting others to know that Jesus is not coming back this time to be hung on a cross. They probably were wanting to show that in the end, God will not be mocked.

I didn't create the fish symbol eating the Darwin symbol (I believe the Darwin symbol simply stands for "There is no God"), but this is how I personally see it.
